Originating from the Mediterranean region, the algarrobo is a large shrub that can reach up to 10 m in height. Its leaves are dark green, shiny on the upper side and pale on the underside, oval in shape.

Its fruit, up to 20 cm long and chocolate-colored when ripe, is used in the manufacture of chocolate and coffee substitutes, liquor production, thickeners and animal feed.
